Abstract

Penelitian ini bertujuan untuk menganalisis mesin pemeras hidrolik dengan penggerak motor listrik dalam produksi santan singkong. Penelitian ini difokuskan pada evaluasi kinerja mesin pemeras hidrolik dibandingkan dengan metode konvensional dalam hal rendemen santan, waktu pemerasan, dan kapasitas produksi. Pengumpulan data dilakukan melalui percobaan menggunakan metode tradisional dan mesin pemeras hidrolik dengan penggerak motor listrik. Hasil penelitian menunjukkan bahwa mesin pemeras hidrolik dengan penggerak motor listrik menghasilkan santan yang lebih tinggi (62,33%) dibandingkan dengan metode konvensional (47,33%). Selain itu, waktu pemerasan santan menggunakan mesin pemeras hidrolik juga jauh lebih singkat (rata-rata 1,93 menit) dibandingkan dengan metode tradisional (rata-rata 32,7 menit). Kapasitas produksi santan juga meningkat secara signifikan dengan penggunaan mesin pemeras hidrolik (96,72 liter/jam) dibandingkan dengan metode konvensional (4,35 liter/jam). Berdasarkan hasil penelitian, dapat disimpulkan bahwa penggunaan mesin pemeras hidrolik dengan penggerak motor listrik dalam produksi santan singkong memberikan hasil yang lebih baik dalam hal rendemen santan, waktu pemerasan, dan kapasitas produksi. Mesin inovatif ini memiliki potensi untuk meningkatkan efisiensi dan kecepatan produksi santan, serta meningkatkan produktivitas dan kualitas santan singkong dalam industri pengolahan.

This research aims to analyze a hydraulic pressing machine with an electric motor drive in the production of cassava coconut milk. The study focuses on evaluating the performance of the hydraulic pressing machine compared to traditional methods in terms of coconut milk yield, pressing time, and production capacity. Data collection was carried out through experiments using both the conventional method and the hydraulic pressing machine with an electric motor drive. The results of the study showed that the hydraulic pressing machine with an electric motor drive achieved a higher coconut milk (62.33%) compared to the conventional method (47.33%). Additionally, the pressing time for coconut milk using the hydraulic pressing machine was significantly shorter (average of 1.93 minutes) compared to the traditional method (average of 32.7 minutes). The production capacity of coconut milk also increased significantly with the use of the hydraulic pressing machine (96.72 liters/hour) compared to the conventional method (4.35 liters/hour). Based on the findings, it can be concluded that the utilization of the hydraulic pressing machine with an electric motor drive in the production of cassava coconut milk yields better results in terms of coconut milk yield, pressing time, and production capacity. This innovative machine has the potential to enhance the efficiency and speed of coconut milk production, thereby increasing productivity and quality in the cassava processing industry.
