Abstract

Kacang tanah merupakan salah satu produk pertanian yang dapat dikembangkan sebagai bahan pangan. Permintaan akan kacang tanah terus meningkat, terutama pada hari-hari besar di Indonesia. Kacang tanah dimanfaatkan dalam berbagai produk olahan seperti kacang goreng, rempeyek, bumbu pecel, dan enting-enting. Proses produksi kacang tanah melibatkan beberapa tahap, mulai dari sortasi, pemisahan cangkang kulit, pemisahan kulit ari, hingga pengolahan kacang tanah sesuai permintaan.Pemisahan kulit ari dengan kacang tanah menjadi proses penting dalam produksi kacang tanah. Pengupasan kulit ari memiliki peran utama dalam meningkatkan rasa kacang tanah dan memfasilitasi penyerapan bumbu pada produk olahan. Mesin pengolahan kacang tanah telah dikembangkan dan tersedia di berbagai industri, baik skala rumah tangga maupun industri besar, disesuaikan dengan kebutuhan dan harga para pelaku usaha.Pada penelitian ini, fokus utamanya adalah merancang mesin pengupas kulit ari kacang tanah untuk mencapai pengupasan redimen sebesar 77,47% yang lebih efisien, presisi, dan produktif. Metode rancang bangun digunakan untuk memastikan keakuratan struktural dan fungsional mesin. Pengujian dilakukan dengan menggunakan kapasitas 150 gram kulit ari kacang tanah dan diulang empat kali. Hasil pengujian menunjukkan bahwa mesin pengupas kulit ari kacang tanah dengan sistem rubber roll tunggal memiliki tingkat kacang terkupas sebesar 62,70%, kacang tidak terkupas sebesar 13,98%, kacang tercecer sebesar 6%, limbah kulit ari sebesar 2,51%, dan kehilangan sebesar 0,22%. Rendemen rata-rata mesin ini mencapai 77,47%.

Peanuts are one of the agricultural products that can be developed as a food commodity. The demand for peanuts is continuously increasing, especially during significant occasions in Indonesia. Peanuts are utilized in various processed products such as roasted peanuts, emping (crispy crackers), pecel seasoning, and enting-enting. The production process of peanuts involves several stages, starting from sorting, separating the shell, separating the seed coat, to processing peanuts according to demand.The separation of the seed coat from the peanuts is a crucial process in peanut production. The removal of the seed coat plays a significant role in enhancing the taste of peanuts and facilitating the absorption of seasonings in processed peanut products. Peanut processing machines have been developed and are available in various industries, ranging from household-scale to large-scale industries, tailored to the needs and budgets of business operators.The main focus of this research was to design to achieve redimen stripping of 77.47% a more efficient, precise, and productive peanut seed coat removal machine. The research employed a design and development method to ensure the structural and functional accuracy of the machine. Testing was conducted using a capacity of 150 gram of peanut seed coats, repeated four times. The test results showed that the single rubber roll system peanut seed coat removal machine achieved a 62.70% peeled peanut rate, 13.98% unpeeled peanuts, 6% scattered peanuts, 2.51% waste seed coats, and a loss of 0.22%. The average yield of the machine reached 77.47%.
