Abstract

Gula semut adalah komoditas pertanian yang sangat diminati di Kabupaten Cilacap karena letak topografi wilayahnya yang mendukung pertumbuhan tanaman aren, tanaman nira, dan tanaman kelapa sebagai bahan baku pembuatan gula semut. Proses produksi gula semut masih menggunakan metode konvensional, termasuk proses pengeringan yang sangat penting dalam menjaga kualitas produk. Saat ini, terdapat pengeringan gula semut yang dilakukan secara sun drying maupun menggunakan mesin pengering. Mesin pengering gula semut tipe rak yang menggunakan kompor gas sebagai sumber pengeringan digunakan oleh kelompok tani di Desa Prapagan. Namun, para petani tersebut masih belum memahami secara optimal proses penggunaan mesin pengering. Penelitian ini mengkaji kinerja mesin pengering gula semut tipe rak menggunakan gas LPG sebagai bahan bakar. Dalam penelitian ini, dilakukan uji kinerja terhadap mesin pengering dengan memeriksa waktu pengeringan, konsumsi bahan bakar, dan kadar air akhir gula semut. Hasil pengamatan menunjukkan bahwa mesin pengering mampu mengeringkan 50 kg gula semut dengan konsumsi gas LPG sebesar 2,1 kg selama 8 jam, menghasilkan kadar air akhir sebesar 2,361%. Suhu pengeringan rata-rata mencapai 61°C dengan kelembaban udara sekitar 66%. Mesin ini mampu memenuhi standar mutu gula semut dengan kadar air maksimal 3%. Penggunaan gas LPG dalam mesin pengering ini dinilai efisien dan dapat menjadi alternatif yang berkelanjutan untuk proses pengeringan gula semut. Hasil penelitian ini memberikan wawasan penting bagi industri gula semut dalam meningkatkan efisiensi produksi dan mengurangi dampak lingkungan melalui penggunaan bahan bakar yang lebih efisien.

Palm sugar holds significant agricultural importance in Cilacap Regency due to its topographical advantages fostering the growth of palm, toddy palm, and coconut plants, essential raw materials for palm sugar production. Current production methods involve both traditional sun drying and machine drying processes. The local farming communities in Prapagan Village utilize rack-type sugar drying machines powered by LPG gas burners. However, these farmers lack optimized understanding of the machine's operational nuances. This research meticulously examines the performance of rack-type sugar drying machines utilizing LPG as a fuel source. The study delves into critical parameters such as drying time, fuel consumption, and final sugar palm sugar moisture content. The findings reveal the machine's capability to dry 50 kg of palm sugar with a mere 2.1 kg of LPG consumption over 8 hours, resulting in a final moisture content of 2.361%. The average drying temperature reaches 61°C, with surrounding air humidity at approximately 66%. Notably, this machine adheres to the industry's quality standards, maintaining palm sugar moisture levels well below the permissible 3%. This study highlights the machine's efficiency and underscores LPG's potential as a sustainable and eco-friendly alternative fuel for palm sugar drying. The insights gained here offer invaluable perspectives to the palm sugar industry, aiding in enhanced production efficiency and reduced environmental impact through the adoption of more efficient fuel sources.
